Because the average person doesn’t know the physical anatomy of a steer, when describing where the particular cuts of meat are coming from, a diagram would be very helpful. For instance, I’ve always believed a filled mignon to come from what we call the back strap on a deer or elk. If a diagram were provided, I would know if this belief is correct.
